Mix Up Mealtime Snack: Trail Mix Cookies
Mealtime around The Samples house is like going on an exotic journey. Why? Because I love finding new products at the grocery stores and putting together fun creations that are just….different and delicious. There’s nothing more challenging then finding something new and going home to create a recipe around it. I love the challenge of thinking outside of the box and finding flavors that work well together. It is a very rare day to come and have a plain steak, potato, and salad at my house. If I’m serving steak it’s going to be marinated in something you have never experienced and the potato bar I create wont be something to blink at.
While hunting around the grocery store last week I found something new, Jif Almond and Cashew Butters. I’ve seen Almond Butter before, but this one was a no-stir so I thought it might be great in the kitchen. I have never seen Cashew Butter before so I was intrigued. One of the first things that came to mind when I finally tried it at home was Trail Mix. I’m not sure why, but I actually woke up this morning thinking about a fun cookie idea using the Jif Cashew Butter, Trail Mix Cookies.
Mix Up Mealtime Snack: Trail Mix Cookies Recipe

Serves: 30 cookies
Ingredients
- 1 cup JIF Cashew Butter (Chunky)
- 1 cup Sugar
- 1 large Egg
- 1/8 cup grated coconut
- 1/8 cup dried pineapple (chopped)
- 1/8 cup mini-chocolate chips
- 1/8 cup raisins
- 1/3 cup flour
- dash salt
- 1/4 teaspoon baking soda
Instructions
- Pre-heat oven to 350 degrees.
- In a large bowl mix together all ingredients. Be sure to chop the pineapple into small, bite size pieces.
- Once mixed thoroughly roll into 1″ balls and place on baking sheet. Press down slightly to flatten.
- Bake until golden brown and let cool 10 minutes before serving.

my favorite holiday recipe is one for russian tea cakes. also known as mexican wedding cookies, these are kind of like shortbread rolled in powdered sugar. they are my favorite because they taste wonderful and my mom has been making them only at Christmastime for as long as i can remember so it is a tradition for us.
