Recently i was too addicted to this mayonnaise..But i was not at all feeling guilty at all, because this is so easy to make and so healthy as well, since there is no much oil in this.
About Eggless Mayonnaise Recipe
I have been getting lots of comments and mails from my viewers to share eggless mayo recipe. I would say this is one of the most requested recipe in yummy tummy. have posted a traditional mayo recipe on this blog before, it is made using egg yolks and lots of oil. emulsifying the mix in a blender is the trick, but it doesn't always work for everyone.
There may be so many reason which prevents the eggs getting emulsified. Many of my viewers have told me that their mayo has turned watery and stuffs like that. So here i am with a nonfail version of making the perfect creamy mayo, I am telling you this is one of the best mayo i made and i can have it with no guilt.
Because there is only very tiny oil in this. This is the first time i am trying it, i had no clue how this will turn out. But once i made it, i was totally surprised. It tasted like a real mayo. No difference at all.

Ingredients for Eggless Mayonnaise Recipe
- Cornflour / Cornstarch - 4 tblspn
- Low Fat Milk or Regular Milk - 1 cup
- Salt to taste
- Sugar - 1 tblspn
- Black Pepper Powder - 1 tsp
- Mustard Sauce - 2 tsp
- Olive Oil - 1 tblspn
- Vinegar - 2 to 3 tblspn

How to Make Eggless Mayonnaise Recipe (Low Fat & Healthy)
- Take cornflour in a bowl, add in ½ cup of milk and mix well.
- Now take remaining milk in a sauce pan and heat till it is heated up.
- Add in the cornflour mix in slowly and keep mixing till there is no lumps. Keep cooking till it gets thick.
- Remove this to a bowl, add in remaining ingredients and use a whisk to whip till creamy.
- Refrigerate it and use as needed.

Ingredients
- 4 tbsp Cornstarch
- 1 cup Low Fat Milk
- Salt to taste
- 1 tbsp Sugar
- 1 tsp Black Pepper Powder
- 2 tsp Mustard Sauce
- 1 tbsp Olive Oil
- 2 tbsp Vinegar
Instructions
Take cornflour in a bowl, add in ½ cup of milk and mix well.
Now take remaining milk in a sauce pan and heat till it is heated up.
Add in the cornflour mix in slowly and keep mixing till there is no lumps. Keep cooking till it gets thick.
Remove this to a bowl, add in remaining ingredients and use a whisk to whip till creamy.
Refrigerate it and use as needed.
Notes
1)When you refrigerate it, if it gets too thick. take the mayo in a mixer, add little more milk and blend till smooth.
2)This can be stored in fridge for 10 days.

Version 2: Veg Mayonnaise with Milk

Ingredients for Eggless Veg Mayonnaise (with Milk)
- Olive Oil - 1 tbsp ( You can use any oil )
- All Purpose Flour / Maida - 3 tblspn
- Milk - 1 cup ( Boiled and Cooled)
- Vinegar - 2 tbsp or to taste
- Salt to taste
- Black Pepper Powder to taste
- English Mustard Sauce - 1 tsp or to taste (you can powder mustard seeds and use)
- Sugar - 1 tsp
How to make Eggless Veg Mayonnaise (with Milk)
- Heat oil in a pan, add in flour and fry it for 30 sec so the raw smell leaves.
- Add in milk slowly and keep mixing so no lumps is formed. Now keep cooking this till it gets thick and creamy. It has to be thick, but not too thick.
- Remove from heat and pour this thick sauce into a bowl and let it cool down.
- Once cooled add the remaining ingredients and mix well. Taste and check, if you want more vinegar you could add.
- Chill this for a hour before serving.
- This can be stored in an air tight container for a week in fridge.

What a waste of ingredients. When it cooled it was a solid piece of car tyre. Are you sure it should be 4 TABLESPOONS cornflour?

once it gets cooled, you have to whip it up. You can use a blender to whip till creamy and fluffy.

Hi Aarthi, can we replace corn flour with rice flour, as I am trying to use this regularly almost on daily basis for salad dressing. Can you tell me how much to use please? Also lemon instead of Vinegar?

I haven't tried with rice flour. But u can give it a try. And yes lemon juice can be used for vinegar.
